Need a little help here....

I'm getting one of two guns next week a Taurus 1911B .45 or a CZ75 SP01 9mm 19-round (non Tactical). and I honestly don't know which one to get.

I will end up getting both, but I don't know which one first. I'm really sittting on the fence on this one.

There also a RIA .45 hitting me in the head too.

Pretty differant guns. Plinkers, carry, duty, home protection? I'd say go with the CZ first, naturally, cheaper ammo, better pistola, IMHO,, but if you're so hung on the fence, plus you are going to get them both, flip a coin.

I'll use it for carry,home defense and plinker I already have a .45 Wittness that is a dead in shooter.

The SPO1 has much higher mag capacity, and is cheaper to shoot, so I'd say that would be the starter for what you list. Leather is available, if you are of a body shape/size to conceal any full size sidearm.
