I've got several of those "spam cans" of ammo, both rifle and pistol. Some is relatively new production (less than 3 years old). Is it better to leave it in the spam can, or put it in a USGI ammo can with desiccant and a humidity indicator card and check it once a year or so?

How do I know under what conditions the ammo was sealed in the spam can to begin with?

What do you guys do?

If you are going to use the ammo sometime soon nothing wrong with opening the spam can and putting the ammo in a ammo can. If you are going to store the ammo long term leave it sealed in the spam can. There's really no way of knowing what condition the ammo was in when sealed but I have yet to see any ammo degradation from a sealed can. (as long as the seal isn't broken)
 
I treat my spam cans like Christmas presents. I wonder what the ammo looks like inside, but won't know until I open them.
 
Assuming a GI ammo can has a good lid seal ring, and you don't put water in it when you put the ammo in it?

Opening it every year to look is doing more harm then good.

Unkle Suger doesn't feel the need for dissecent packs in them either when they pack them at the factory.

Same for the spam cans.
They should be as good years from now as when they were packed if you don't unseal them.
