I suppose that depends on what you mean by a Galil conversion.
The Ace/Tromix folding stocks for Saigas have a Galil-type look but are expensive. The Tapco folding stocks are plastic but Tapco makes a matching drop-in Galil-style handguard for Saigas (black or green). Those last two and a Surefire high-cap magazine would be the cheapest way to go, but would still cost as much again as the rifle. The Tapco stocks are not a drop-in fit, however, and require some work.
If you're set on a high-cap conversion, go for it, but I'd just get aun unmodified .223 Saiga with standard or skeleton stock and leave it at that. Personally, I can't see spending more than the rifle cost in the first place just to make it tacticool.

They are very different while being the same. The receiver on the Galil is machined with a different geometry (almost wedge-shaped) than the somewhat rectangular stamped Siaga. Plus the bolt grasping knobs are different as well as sights, gas block, sight block, selector knobs, etc. You can produce one that has a Galil look to it, but it would be very clearly not a Galil even in the most casual of glances.
I say that without malice. If you go that route, feel free and have fun. But making a Galil out of a Siaga just won't happen beyond the handguards and folding stock.

I think one hard part would be the rear sight. The Galil's rear sight is an aperture mounted on the top cover.
Like Ash said, best you could do is an AK with Galil furniture (and maybe a few of the controls if you were real handy with metalwork).

Speaking of www.classicarms.us, if you scroll down the page they have what appears to be the Tapco folding stock, pistol grip and Galil-style handguard one sale as a set. The handguard alone, which would look good with the factory Saiga skeleton stock IMHO, is only $36.50.

They are Galils -- parts kits rebuilt on US made receivers.
Downside: Century built them.

Century didn't build them. They contracted the build, but the wizards in Georgia, VT, didn't do the building.

This is as close as I got; basic conversion wtih Galil Orelite mags. It lacks the Galil sights, cross-safety lever and bolt handle. None of those are really important to me, tho, so I'm happy with this as it sits.

That's an Ultimak. I love 'em.
The rifle is a standard Saiga 223 conversion, with the Galil Orelite mag, extended safety, Ace sidefolder, and the Ultimak as the options. It lacks a flashhider, which I still have to add.
The rifle is as accurate as my service-grade ARs (3 MOA) or moreso (I've gotten consistent groups under 2" with good ammo).
