I would think that this is one of those things that need an expert hands-on appraisal. The two key words would be "authenticity" and "condition".

A well polished and blued gun is a thing of beauty. If they are kept with a light film of a good oil on them then the finish will not discolor. I have some guns that are over 75 years old and the blueing is still good.
That being said, bluing does wear fairly easily especially on sharp edges...
