It is not a picture of my actual one, it's up at my dads right know. some key works on the Google found this one looks very much like mine, but this one says USA mine is made in Germany. This one is a sorensen co. Sharpening stone, with 3 stones. The one I have, the stones have never been used tho there's no paint on the outside that I remember.

I always thought it was cool, I'd guess it's what a old butcher shop would have used?. And would it be used with water or oil,

Basicly it is an old, heavy, fixed table, system of 3 stones, course, medium, and fine. You turn the knurled knob to select the desired stone. I used oil in mine.
Good for large knives.
I prefer free hand shapening, but it has its place in the spectrum.
 
I've never owned one of those tri-stone setups - but can remember seeing them in catalogs years ago... As for the stones - I have both water and oil stones... the only difference is what you use with them from the first purchase. I figure that a stone with oil will always, during its life be used with oil since it would be a lot of trouble to remove the oil once it's soaked into the stone. A stone used with water could always be turned into an oil stone once it's dry though.
I like an oil stone (natural or synthetic) for shop use and keep one water stone for knives used in the kitchen... and one for for fish cutting purposes on my skiff when I'm working (full time fishing guide - and I do cut fish for my customers daily if they're wanting to keep a few after a day on the water...).
 
My father worked and lived at his uncle's butcher shop from age 13 when his father died in 1931 until he was drafted for WWII. I have a number of keepsakes like that. He used 3 in 1 oil.
 
Mine is a Norton Oil Stone, made by Norton Abrasives, Troy New York.

IIRC, that is the one I used back in High School, working at a restaurant many moons ago. Seemed to be an expensive tool back then but was nice to have the three different stones for just a touch-up or a full blown sharpening.

Was on a trip when I ended up in Gatlinburg, TN in the late seventies. Stopped in a Knife shop where those Norton set-ups were for sale at $19.99.:eek:
Got home and was almost scolded by Dad for not buying a couple.:( Not much room on a motorcycle..........

Was at an auction in Ely, MN about ten years ago and one like Troy's picture but with a green cover went for $ 60.00. Yes, I was bidding on it but gave up when it hit $ 40.00.

May get one someday, and then again, why?
Gone over fifty years without one. Just another nice tool in the "box".
