Running low on wild game.

I lived eating ducks when I lived in Michigan. Then I ate them in Oklahoma. They taste like mud.

You picked bad ducks. Nothing better than a teal, redhead, or wood duck plucked, split in half and cooked med-rare on the grill. Prime rib on the wing as far as I'm concerned.
Shovelers, salt-water bluebills, and goldeneyes are at the bottom of my list.

Red head, teal and wood duck are good. I thought it was the muddy water vs clear water in Michigan.
I have no idea what the duck I ate down here was. A coworker brought in duck sausage with cheese. It tasted like muddy fish. I figured if cheese didn't make it taste good. Then I'm out.
 
I have had excellent duck and really BAD duck. the good duck was breaded and pan fried,
Soaked overnight in milk and egg, then breaded and pan fried is what I consider "good" duck too. We fillet steaks off Canadian goose breasts and fix them the same way. I'll eat roasted Canadian goose, but it's a long ways from being my favorite.

Goose in a Crock-Pot with onion, carrots, and potatoes. Season with Cajun seasoning and garlic. A few strips of bacon thrown in helps.
 
I dont really like wild fowl. we raised moscovy ducks and those were delicious, but few wild ones Ive had were a lot like turkey to me. kinda a strong flavor.
What i do for most of them i chop into 1/2" cubes baking soda soak, vinegar or red wine soak, then bater and fry in cornstarch and top with sweet sour sauce.
 
These bird recipes are like a recipe a old timer told me for bluefish. Use every condiment in your fridge, make a marinade then soak for 3 days, put grill on high. Cool fish for one hour, get sliced bread remove the peace of carbon that was once fish and rub the grate with the bread and enjoy.

That sounds good. Deep fried wild game is always good.

Good food takes care from the time it's killed to the end. Seasoning appropriately makes it breaks it.
My pork seasoning is way different than my venison one.
I put carrots, onions, and potatoes in everything. Apples go in also if I have them.

guess you never had bluefish lol.

some good season can make a off taste, I like using Italian dressing for marinade but the last few deer roasts I did had a little off taste. Could be my taste buds are changing.

Try garlic, parsley, oregano, fennel seed, black pepper, red pepper, salt and drizzle molasses over it.
I run all the seasonings in my coffee grinder to blend them.
Fennel seed adds that something I had been missing in my seasoning until I read about it on a cooking site.
This recipe doesn't work well on pork.

There a saltwater fish, in the East coast, very fun to catch get about 20lb used to call the big ones alligator blues, I've had the bite a lead diamond jig or bank sinker in half. They got some big teeth to.

The young ones called snappers are not to bad, but when they get bigger they get oily and dark meat, with a strong flavor. Only way I have had it that was good was smoked. The islanders love them tho.



For deer and beer I like Worcestershire sauce and soy sauce.

thats the only way i like the big tuna.

oh tuna and pork fat sausage is really good too.

Bluefish will eat anything, guys used to joke if you fell in the water when they feed you would be toast lol. They have a unique flavor,

Thanks for bringing up sashimi now I'm hungry. Ya a dab of wasabi mixed in with soysause and some pickled ginger is my favorite way to eat it. The mate on one boat I go on would bring a few pounds of fresh tuna for lunch every day.

Maybe I'll get a bear this year but Heard it can be very good to very bad.

Ive heard similar stuff, id bet diet plays a huge role in how an omnivore tastes. Cant say ive tried any of them yet.
 
We ate the last of our wild pork this week and are down too about 15 pounds of ground venison.
I can't wait for it to cool off again so I can restock on meat.
This year, I'm going to try to get more pigs.

You don't have to wait until cooler weather to get pigs. Just have some ice and an ice chest and you can stock up any time.
 
I am not sure I follow. We have people here who trap and eat throughout the year.

Where is it that you can only trap them?
It's a property that I only have permission to trap. I also don't have time to dedicate to hunting through the summer. My farm eats my free time during the summer.
I haven't had time to get my processing shop built yet.

Bluefish literally go crazy in schools of Bunker fish, a very oily fish harvested for fertilizer. The Blues will go into a feeding frenzy, take a single bite from a Bunker and go onto the next one.

When they pass the water is full of damaged Bunker floating on to top. When you see them hit a school, the water is boiling with fish trying to escape, it's almost scary to think of putting a hand in the water.

Blues give you a great fight, but not everyone enjoys eating their oily flesh.

Does anyone eat the wild chickens I see everywhere on O'ahu? No matter where you go on the island, they're there in large numbers.

Is it the same on the Big Island?
