What knives have you used/will use for prepping for T-Day.

I spatchcocked my turkeys with an early Becker 5 this morning so I can roast them flat. It is a heck of a knife for removing the spine of the birds. Big blade, full grip, Morseth grind, terrifyingly sharp after a couple of decades.

My veg prep has been done with my Becker santokus.

I’ve got a Spyderco Santoku we will be using on sides. Just a smallish kitchen utility knife for the turkey as we are just air frying a couple of turkey breasts, not a full turkey. Those are some good looking knives
 
For chopping up celery and onions, an 8" Old Hickory Cook knife that was gifted to me.

I use a mix of Idaho and red potatoes for making mashed potatoes and I cut them into about 2" cubes before boiling. I use a 12" Wüsthof to cube the potatoes:

I've tried different knives for cubing the potatoes and the mass of the Wüsthof makes it the easiest to use, of the knives I have. I don't have a cleaver anymore. For initially cutting the turkey breast I use the Wustoff but when I get in close to the bone I use this cheap IKEA Ändlig:

The Ändlig is really a bread knife. It came in a set of 3 knives for $7.99 :)
 
I do the turkey and my famous cranberry sauce & the wife does the sides.

I used 2 knives.
A parar about 3.5" to cut the bird out of the wrapper

And a ~6.5" Santuko for chopping the apples pears onion bacon and for carving the turkey. I didn't want to waste time getting a larger knife to carve... I was starving and the santuko was out already
