There is nothing magic about the used dryer sheets, as such. Any loose material that can trap the dust will do it, bits of T shirt will work as well. Used dryer sheets have been "fluffed" up some so they work better than new ones.
How much to use isn't critical, I typically toss in a couple of 3" squares from time to time when it seems proper. Most of the "dust" most people have is from excessive polish that's dried and then pulverised in the tumbler so it really doesn't matter much anyway.
If you pour a couple of ounces of mineral spirits/oderless paint thinner in the media from time to time it will help soften the dryed polish and sort of "reactivate" it. Let the tumbler run until the liquid no longer makes clumps before you add brass, maybe 10 minutes. Personally, I rarely use polish much anymore, it does nothing good and the dust can be agravating.
