P220 hands down If you just want SAO, they have it: Otherwise you can get CPO P220s for $500 or so. As for the discussion of DA/SA vs SA I liken it to learning to drive manual vs automatic shift. Sure, you can just always buy automatic cars but if you know both you're never...

Technically DAK is a double action only trigger as you don't have to cock the hammer. But functionally it's a pre-cock or partial cock trigger with a lighter pull than straight DAO. I've dry fired them and it's a very intriguing system; I want one to compare to the DA on my P220ST. :)

+1 on the CPOs I've purchased both CPO and new and have been very happy with the CPOs. At worse you'll find more 'Sig smileys' on the barrel. At best you'll get a near new gun for a much less than the new price.

Congrats! I know that feeling. I waited four months for my P220C SAO to come in, but it finally arrived yesterday. :D If I might make one suggestion: Until I've had a gun to the range and test fired it with both FMJ and carry ammo I wouldn't trust a new gun with defense duties. Perhaps...
