Like 10X said, Mec-Gar is the way to go. I just bought 3 of their flush-fitting 15-round magazines from CDNN and posted a little review of them on my blog here.
CDNN also carries the standard 13-round magazines and the 15/17-round South African jobs.
I *think* Alex Inc. makes an adapter for this.

Also be aware that the SA model has a different slide with full-length rails instead of the Hi-Power style lightening cuts on the regular B model, so it might not fit into all CZ-75 holsters.
The factory adjustables are recessed down into the slide and that will limit your options for replacement sights. In fact, I don't know of anyone who makes a replacement rear sight that fits the current slide cut; you might have to have the slide welded up and re-cut.

Greener made some Martini-actioned shotguns that fired a special 14-gauge, bottlenecked shotshell. The gun/shell combination was specifically designed so that stolen guns would be useless without the special shotshells.

Re: cameras capturing infrared light, if you have a digital camera with an LCD display, try pointing your TV remote at the camera and pressing one of the buttons. You'll see the IR from the remote on your camera's screen.
As El Tejon said, open-bolt guns are less accurate than closed-bolt designs, because the impact of the (usually quite heavy) bolt slamming forward is much more jarring than a hammer hitting a (usually very light) firing pin. It seems to me that lock time would also have to be a lot longer, too.
The Interarms Mark X actions are currently being imported by Remington and used in their Model 798 sporter. To the best of my knowledge, bare actions and barreled actions are no longer available.
Also bear in mind that you might not want to go with a 26# mainspring if you plan on using +P ammo in the HP. The mainspring absorbs a lot of the energy of the recoiling slide, and going to a weaker spring means that the slide and frame take more of a beating.
The guns themselves have a good reputation, but this is the SECOND time in the last 5 or so years that Steyr has had a major disruption in supply. If I bought the gun, I'd also try to stock up on spares of the parts that are most likely to need replacement...
