223. Coyotes just don't need much more than a .22 Magnum to do in.
223 Remington is both common and cheap with a quite good ballistics properties.
Hard to beat the .223 for general varmint use.

Lets be honest Mourning Doves aren't real tasty.
There isn't much meat on them and they are tough little Buggers and if you get past THAT they still taste like liver.
