I like the barrier on close fitting holsters because it helps keep my shirt clear when I'm reholstering, and it is much more comfortable for longer periods of time if you have a little extra around the middle.

If your going on pure function, shark. That hide is so resistant to wear and abrasion you will wear the dye off of it before you wear the belt out, assuming you take care of it like any belt should be cared for.
Horsehide makes a great belt that will last a long time if you take care of it. Other than aesthetic purposes, the exotic hides offer more resistance to wear and abrasions. Elephant will resist scuffs and abrasions better than horsehide, and shark will have even more resistance than elephant.
I'll try my best to break it down for you simply, and you can determine what is the most important for you. The holsters I will refer to are all leather, though kydex holsters of similar construction will have many of the same qualities as far as concealment is concerned.
