Why destroy the rifle? Sell it to someone that handloads.
Looks like a candidate for a 30-30 barrel. I've seen it done a couple times with those. One in 7-30 Waters would be sweet, but the OP doesn't reload.

I just gave myself *another* project idea without thinking.
 
I agree with the others that your rifle I’d a 1916 Spanish Mauser.
Back in the 80’s SAMCO sold a bunch of the nicer ones they had. I got mine from Big 5 Sporting Goods in Garden Grove California in 1984. They were advertised at Spanish Mausers chambered in 308 Winchester.
Over the years I have fired 308 and 7.62 NATO in it. I even took second place in a DCM match, shooting military surplus 7.62 ammo back in 1989.
If you are worried about ammo, there is plenty of subsonic 308 ammo on the market.

I second Gunny's idea. You might need to wait a bit for subsonic 7.62 ammo to restock, but it would be a shame to give up on a rifle before at least testing it to see how it shoots: https://aimsurplus.com/ppu-7-62x51-308-subsonic-200grn-fmj-20rd-box/

Any discussion of CETMETON Spanish Mauser conversions can get confusing in a hurry, as many countries in South America had some of their Mauser rifles converted to 7.62 NATO. There is a model of Mauser commonly referred to as the "Spanish Mauser" (Model of 1893) that was adopted by many other countries, and then there are actual Mausers of various models owned and/or build by/for the various Spanish governments. Only Franco's Spain used the CETME loading of the 7.62x51, officially for a period of about eight years until switching to the full NATO loading, and then after that until CETME ammo stocks were used up. It's a bit like talking about the Canada Goose and geese in Canada.

Safety depends on condition, but with 100+ year old steel it is always safer to go light, regardless of the chambering. You don't know where it's been.

I was not well stocked in .308 or 7.62 at all, it's not totally bad here I have 60 aguila 7.62 and a 20 rd box of American Eagle .308 I will try to shoot some at the range with the 7.62 and see what happens
 
For fun at the range that won’t break the bank, get some 7.62 Plastic training ammo.

I have about 1500 rounds of it. Shoots great out to 100 yards.

I shot that in my 1916 as well, felt like a 22.:) It was 8 cents/rnd when I bought it, now it is 18.9c! Rather accurate and does not change POC much at 50 yds, now I use it for sight in to get close to the target.

Try it on water bottles at 100 yards with some friends.
I’ve shot it in a few of my rifles.
