I was thinking is buying a CMP Field Grade then adding a new barrel and stock to it. Then somebody offers me one which already converted and I don't know what to do. I don't know the manufacturers of different Garand parts so I may need some help here. Here's what's on the table:

-SA USGI receiver (all good there)
-Wilson 308 Barrel w\ 100rds down the tube (Wilson? All I know is Criterion)
-Boyds Stock (don't know manufacturer)
-Put together by Orion 7 (sounds like a board game I played in high school)

All for $825 shipped to my door

Now after some Google-ing I found that the aftermarket barrel and stock run about $400 with shipping. Is this a good deal? I don't know where to go from here.
 
I would look for a few things. First, did the rifle come from the CMP and if so, does he have the paper work. That makes a big difference as you know you are getting a squared away receiver and not a welded one. Wilson makes a lot of barrels. They provide them for RRA, Del-ton, and WOA (which is greatly known for their accuracy) to name a few. They aren't top tier barrels, but they tend to shoot well if finished well and typically cost 1/4-1/2 the price of a top end barrel. Boyds makes a lot of stocks. I believe they are the suppliers to the CMP for their new manufacture Garand stocks. Some require a little fit, but typically they are a good price for what you get. I don't know anything about Orion 7.

For me, I would have to see it in person as well as fire it to determine if it is worth buying at any price. From there, I probably wouldn't give much over $700 for it. There is a lot to go wrong in this setup. It can be done well, but it could also be a total nightmare. If I couldn't shoot it first or have a trial period, I wouldn't give what an M1 is running through the CMP. On the other hand, if I could verify the assembler's quality and see it function well I would be a little more willing to spend. A well running .308 M1 is a fun rifle. Most turn into poorly running headaches.
 
Orion 7 is a reputable firm that knows Garands inside and out.You can buy with confidence.There is no way they would ever build a rifle on a rewelded receiver.To change an M1 to .308 is just a barrel swap,not rocket science.The only other modification is a spacer to prevent accidental loading of a .30-06 clip, optional but handy.I have two Garands in .308,and they are both excellent rifles.Wilson barrels are well thought of,and are the standard barrels on all Springfield Armory Inc. M1A's.
Price sounds good,go for it.Most likely this rifle was sold by CMP as a field or rack grade rifle with a worn out barrel and a beater stock.Rebarreled,restocked,reparked,reborn as a new rifle.
 
That's a smokin' deal, and I'd be all over that .308 Garand for $825. It would certainly cost you a whole lot more than that to put one together yourself.
