You don’t mention a price range, but for the games you’re looking at I don’t see how you could go wrong with a Les Baer PII.

It’s got the accuracy and most of the features you’re looking for, add a magwell and you’re about set. The adjustable sights will help out when you go back and forth between softball and pin loads.

YOu can get in a lot of trouble if you don't set some parameters ;)
That said, I like the HK USP Elite & Expert, the Target P9S, S&W PC 945, and the 1911 (a great platform for building into your ideal target gun)
 
I like my Kimber Eclipse Target. 1911 design solid steel and much more accurate than I.

Rock River Arms and STI also make very accurate pistols, I believe RRA even makes an old fashioned bullseye gun with rib. It's always hard to go wrong with a Baer or Brown if you have the means. The S&W full size 945 is an amazingly accurate pistol also. Probably if price is an issue the STI, I think you can get into a single stack for around $1100 or so. The RRA and S&W probably around $1500-1600, and of course you can spend as much as you want on a Baer or Brown with the options they offer.

I have shot several Springfields and Kimbers, the high end Springers (c. $800-900) are fine defensive pistols and accurate enough for most uses, as are the Kimbers. But in my somewhat limited experience they are not quite in the same class as the above from a pure accuracy view.
