I'm just putting together some ammo for a carcano I picked up recently and was wondering if anyone could let me know a good starting OAL for this cartridge. I'm using new Privi brass trimmed to 2.055, Winchester Large Primers, 27grn of an Australian powder called AR2206H and 160grn .268 Hornady bullets.

Assuming you slugged the barrel to verify .268 and not .264. Hornady manual calls for 2.96 COL. Not familiar with your powder, just be careful. I have been using 4064 at 30.7gr with good success. Good luck with that torpedo shooter.

Hodgdon imports AA2206h and renames it H4895. They list it on their web site as 27 gr - 30gr max with a Hornady 160gr RN at 2.935" OAL

Max COL is 3.012" for the Carcano action with any bullet.

Hornady manual lists an OAL of 2.960" with the 160 grain RN bullet they make.

I am sure that you are aware that after a couple of negative experiences, Hornady (in the person of Dave Emary) does now warn against using _any_ other loads and propellants with their .268" bullet than those which they explicitly recommend as suitable.

The chosen bullet size .268" was wider than the Italian original specifications, and this in conjunction with a civilian-style thinner buller jacket, has led to... let's say, to problems.
