Im wanting to build a nice 6.8 SPC coyote gun Im wanting to build it off of maybe a used remington 700 action... What bolt head would you be able to use to rebarrel to 6.8? Thats what im confused about Im wanting to throw on a HS stock and a nice luepold varmint scope...

Remington made, at one time, a model 700 Police chambered in 6.8 SPC. CDNN still lists them in their catalog (you'll have to download it). You may be able to find one on the auction sites.

Yea, the 700 Police likely is not made to the latest spec (6.8 SPCII) that the AR guys are using.
The 6.8 case head is based on the .30 Remington, so look for a bolt in this spec. Can you get a 6.8 bolt from Remington?

No, 6.8 (.30 Remington) and .308 do not have the same case head size.
The only difference between the SAAMI 6.8 and Spec II is a 0.100 freebore. This reduces pressure of up to 8000 psi. IIRC a 1/11 rifling twist is about ideal as well.

For a bolt gun there are a lot better options then 6.8Rem Spc.
The 6.8 is good to maximize the power of an AR15 type rifle. For a bolt gun , that doesn't have the limitations of the AR15 magwell/mags, I don't see the reason to get a bolt gun on 6.8x43mm.

I find the Ruger compact bolt rifle in 6.8 very interesting. Why have much more power than needed? The 6.8 is an excellent round for a compact, light weight bolt action deer rifle. I'd love a CZ carbine in 6.8.

I have been playing around with various experimental handloads in the 6.8mm SPC (270 short) over the last year, using a 16 inch barreled AR-15 platform. While it may be slightly better than the 5.56mm in an AR15 size platform, it falls short of terminal ballistics when compared to most other cartridges available in short action bolt guns. The 243win, 260 rem, 7mm-08, 308win, 338fed, 358win and 350 Rem Mag are all better choices for a short action bolt actioned rifle.

The first thing you should do is go to 68forums.com. Registering is painless and totally worth it, if you are contemplating buying a gun in this caliber. Obviously it won't keep up with a .270win or .308, but that's not the point. If you want less recoil and are even thinking about a 7.62x39 or .243win, you should give it a look. The 6.8spc is superior to both, especially considering you can get excellent performance in a shorter barrel. It is important to get a slow twist for optimal results (1:11 or 12), although this seems contrary to logic, if you compare it to the faster rate require to shoot longer bullets in 5.56.

I strongly agree.
If you're a coyote hunter and looking at building a rifle I assume you handload also. I would look at .260 Remington, 6.5mm Creedmoor (new Hornady cartridge), and even .243 Win and 7mm-08 as options with a lot more going for them in a bolt action rifle. IIRC all four of those are based on the .308 Win case head.

to FINALLY answer the OP's ORIGINAL question
If not using a factory "6.8" action you'll have to start with a rifle using a .223 bolt face and have it opened up to .422"
The next size up in a off the shelf action is going to be the ubiquitous .472 which is already too large for 6.8
