I recently bought a Weatherby .308 and all I intend to use it for is target practice. I would like some opinions on where and which ammo to buy. I've never owned a .308 or a Weatherby. I plan on shooting in the 500 yard range eventually but for now I'm hitting at 200. Thanks.

Well, the best ammo would be rolling your own-at least for the money and if you are careful, the accuracy as well. So far as store bought, Federal match ammo 168 grain is one of the most respected, along with similar ammo from Black Hills.
500 yards is a fair piece, and you might see better results from 175 grain match loads. I'd buy a box of Federal, Black Hills, Hornady and a few others and see which groups the best in your rifle.

Had the same question about my Remington VS in 308-turns out the most accurate I could buy was Remington Match-fancy that! Does not mean the ammo made by the same name is always going to be best, but it does happen.

For target ammo in my Tikka T3 in 308 Black Hills 168gr HTHP Match is the most accurate, but not by much. Federal's match ammo comes close, so close that I'd have to shoot a whole lot of each before I could say for sure (and I'm too poor for that).

A lot of hunting loads do well too such as Federal's 150gr Nosler Ballistic Tips and Winchester's Ballistic Silvertips (virtually the same bullet except the coating on the Win).

To find out for yourself you just have to buy the ammo and shoot it.

Like Delmar said, you may find the most accurate ammo by loading it yourself. I just started reloading and havent loaded much, but a rangemaster I know let me shoot some of his reloads. They were 150gr Nosler Ballistic Tips over some IMR (forget which powder) and I was surprised to see them outshoot the Black Hills and also surprised that the load that worked best in his Savage also worked the best so far out of my Tikka.
