I think reagansquad has the right idea. A mountainbike and/or a good set of backpacking gear, along with a few days food and water, is probably enough to get you through (or away from) just about anything.
I'd say that a good knife is the single most important item. It's the ultimate all purpose tool, and a superb weapon if you're willing to use it fiercely.
Tying for second place would be matches and a good pot. You need both to boil water
Third on my list is a stout pair of hiking boots, for obvious reasons.
Fourth is shelter, in the form of a tarp. Compared to tents, I find tarps to be lighter, more weatherproof, less likely to break or fail, and much cheaper. (Note that a tarp requires stakes and rope, too, not just the tarp itself)
I'd prefer that full set of backpacking gear mentioned above. But I think I could get by comfortably with just these specific items.
Luxury items would include baby wipes, Oreo cookies, a gun, my mp3 player, and most importantly, my girlfriend.
