There are high speed x-ray devices that have been used to "watch" the functioning of firearms, among other things. You don't get to watch the burning gases but you do get to see all of the parts functioning at working speeds.

Interesting but a bit expensive to do just for curiosity.

If you are primarily interested in the combustion aspects will you need to see inside the cartridge case. There are a couple of gents working on a "new & improved" case design that is supposed to maximize powder combustion. They have at least one cartridge and rifle on the market now. It has not revolutionized anything but it seems to function as well as the others out there.
