Does anyone know how many open carry states there are and which ones are open carry?

Oh yeah, and there's a hiccup in TX. If you go to 46.15 Inapplicability (b)(3) allows OC for Hunting, fishing, and suitable sport activity. Now, (2) covers traveling; but 46.02 already states you must be concealed if in a motor vehicle. Which does beg the question of traveling using, say, a horse 9checking Transportation Code of use of ROW by other than motor vehicles; wagon and beast of burden might be unlawful vehicle use of public roadways).

Of course its only technical that you can OC in 44 states.

If by technical you mean it's not prohibited by law, then yes. Just like technically you're allowed to purchase a ham sandwich, but there's no law explicitly saying you can.

There does not have to be a law that allows you to do something. If it's not prohibited, it's permitted.

I live in the State of Tennessee; and with your "Handgun Carry Permit" in your posession Open Carry is Legal. But of course if you don't have your permit in your possession it is illeagal to carry period, paragraph.
