Try the Walther PK380. It was my girlfriend's starter gun, and it is probably the softest shooting .380 I have ever fired, and the slide is very easy to rack. Also, I own a Ruger LCP as well, and I definitely do NOT recommend any of the mouse guns, snappy recoil, and it has a tough slide.

They can be had for a little over $300 if you catch a sale price.
 
I'll put in a good word for the Smith & Wesson BG380! The recoil is negligible at best, slide stays open at the end of the magazine, is easy to handle, accurate out of the box, and easily concealable at all times. I carry an extra magazine with me at all times and use Hornaday's critical defense ammo.

It would probably be best to have your wife shoot any gun before purchasing if possible, but definitely make sure she tries the Body Guard 380.
 
This is my Wife's carry (1G Kel-Tec P-32 6.6 oz. empty), easy to rack and fire and goes bang everytime with Fiocchi 73gr. 8+1 FMJ:
