It is really not that hard. I have done a S12 and 7.62x39. The trickiest part is installing the bullet guide on the rifle but that is is drilling a hole and tapping it.

Or just use SureFire or Master Molder mags and not have to install the bullet guide. Counts as 2-3 parts as well.
Surefire mags aren't nearly as cheap as standard AK mags, FWIW. YMMV. :)

... but if you don't plan on filling your utility room with "SHTF mags", their price may be more attractive to Saiga owners who only plan on having a few mags versus the cost of having a bullet guide installed.

A bullet guide is a very inexpensive part $25. Thus if one plans on having more than a few magazines it is the more economical route than to buy Surefire mags which run upwards of $36.

Do you have to do anything other than install the bullet guide for them to accept AK mags?

Your Saiga will have to conform to 922r if you use standard military mags in it.

Depending on the Saiga you choose, only a bullet guide may be required, up to a reshaping of the rifles mag catch.

nope, except you may have to dremel the backside of your ak mags a bit...
Better to mod the rifle to use any magazine, than mod your small collection so they only they will work in it.
