Concealed carry & lawful use of a fixed blade knife in Florida

I'm in a bit of a predicament as to whether or not it is legal to use a fixed blade knife(i.e. sharpen a pencil, whittle a stick, open a box, etc...), in public, that I would be carrying concealed. As I understand it, to conceal carry a fixed blade knife in Florida requires a conceal carry permit. However it is legal to open carry any fixed blade knife in Florida.

Would it be legal to lawfully use a knife that was previously concealed for purposes other than self defense?

Are you talking about a small fixed blade or some honk'n anchor?
 
You should check the FL statutes, but FL is one of the most liberal states on knife laws allowing the carry and use of almost any sort of knife.

If there's no prohibition on carrying a knife openly there shouldn't be any prohibition on using it for utilitarian purposes. It is very easy to point out that a small fixed blade is safer than a folder because there's no potential for it to fold up. When carried in a good sheath there's no potential for being cut when not in use.
