I've seen spitzer-type bullets for rifles with exposed lead tips that have crooked tips, even high-quality bullets, like Sierra Game Kings. I've been thinking how much accuracy could improve if the cartridge was placed in a lathe/fixture and cutting down the tip to an actual point. Anyone else seen the crookedness I speak of?

The crooked bullet points don't make near as much difference as you might think. It's the bullet base that is important in accuracy.
If you do shave lead from the tip of the bullet, the weight variation will have an effect on the accuracy much more than the crooked points will.
There have been many experiments conducted on this issue over the years, and unless the bullet points are seriously deformed, there hasn't been any significant detriment to normal accuracy.

You can take five lathe-turned perfect 30-06 soft-points, load them in a bolt-actions box magazine.
Then shoot one.
The four remaining perfect rounds will all have flattened, crooked tips again from the recoil!
