Get a set of dies for each press. Once setup you won’t have to change them and I’d probably just get the RCBS lock rings and set them once and lock them down.
Secondly, the 1911. Obviously.
She works from home 2nd shift. During the week when I stay with her I usually help her cook dinner for her and her son and sit in a chair in her home office. I sit and load while she works. Are you really going to spend your GF time depriming, case prepping, sizing cases, setting bullets, etc, etc,?

Nothing wrong with that. Time spent together is time together. No matter what it is.She works from home 2nd shift. During the week when I stay with her I usually help her cook dinner for her and her son and sit in a chair in her home office. I sit and load while she works.
The reason behind this press was so I didnt have to go home for several days and load hunting ammo. I showed her the basics and she actually sized a ton of brass for me and sat watching TV and used a universal decapper and decapped about 1200 5.56 cases on that little press and wet tumbled and sorted by headstamp for me while I was at work.
She will eat venison but wants nothing to do with how its obtained. That girl is a keeper. Ask her if she likes venison. This reloading discussion is secondary.
My nephew lives a few miles east of Galt's Gulch with his girl. Now for 26 years.
It's a good press and a lot more sturdy than it seems at first glance. I've loaded .30-06 match for Garand on one of these:It’s the last one. The reloader
Only child. Lol. I had to argue with her today about buying me either a shield plus or Springfield 1911 for my birthday in 11 days.
That press is just fine, keep the press and the Girlfriend, loose the shield.....
