My brother is into duck hunting now and brought me a passel of duck breasts. Anyone got any good recipes? I'm figuring on cooking them tonight, and I made gumbo last night, so that's out. I was thinking of sautéing them in the skillet with some soy sauce, brown sugar, and ginger. Anyone got a better recipe?

Marinate in your favorite sauce, grill to medium rare, place in plastic bag, throw in garbage, go to McDonalds.
 
I like to kabob 'em, wrap in bacon, intersperse with potato slices, onion, jalapeno, whatever fresh veggies. I have a recipe I've done a few times with concentrated orange juice for the sauce that was pretty neat, got it somewhere around here, easy to make.

Ducks are an acquired taste. We all love 'em. Sorta like chicken liver. In fact, the taste reminds me of chicken liver, and I love chicken liver.

It really is pretty good grilled, but you need to pin some bacon to each breast and grill some onion slices with it. I've been shootin' and eatin' ducks and geese for over 40 years. I still prefer dove breasts, though, and quail is awesome. But, we eat a lot of waterfowl here because that's what I do. :D

Haha, I forgot it was open mic night! :neener: At least you didn't pull that old one about seasoning them and then placing them over the oak, then throwing away the ducks and eating the oak. ;)

I love it, too. My wife wrinkles her nose at me when I order livers and gizzards at a chicken place. I love calf liver too. Wild duck does have a similar taste. Turns alot of folks off, but I like it pretty well myself.

Just like a dove. Season with Dale's overnight in a ziploc bag. Place a dab of cream cheese and a jalapeno in the middle. Wrap with bacon and cook on the grill.
 
Ended up sautéing them in some brown sugar, soy sauce, red chilis, and kumquats. Kinda Asian/polynesian style. Lemon grass, coriander, ginger, and lemon zest to taste. They ended up being really good. "Sweet heat" tends to go well with gamey meats, especially if you use some kind of fruit to provide some of the sweetness.

Whole duck (gutted). Salt, pepper, beer. Wrapped in foil, tossed into ashes of wood burning stove. That's how we did it when we were younger. Tasted good too.

However, you've only got breast meat. I'd stir fry it with what you suggested.
 
Try wrapping the boneless breasts in a sheet of heavy aluminum foil with a good dose of orange juice concentrate (along with a bit of salt, of course) and bake. Easy, fast, good. Don't overcook.

I'd like to hear your gumbo recipe, please. I have a good one, but always interested in others. Incidently, it is my favorite way to handle waterfowl. Kind of time consuming and fairly labor intensive, but well worth the effort.
 
My dad is an avid duck hunter an he has stuffed them with bleu cheese (season as desired also) and seared them on the stove top in olive oil then place in the oven for a few minutes, don't over cook though too often people over cook duck and it comes out too tough
