What is the easiest, least finicky gun you reload for? It could be a handgun, a rifle, or a shotgun.

It is a gun that digests and shoots just about any load through it well. It may have its favorite loads, but there are really no bad loads for it. Even the point of aim hardly changes.

In fact, it is almost boring. Hardly a challenge.
 
I would have to go with a model 10 s&w

That was my first thought as well.
My S&W 10-5.
I've tried 5 or 6 different bullets & dozens of powder loads (5 different powders, a whole mess of different loadings)
All of it well.
 
My model 14 smith. I don't believe there is a bad load. But then again most
38's seem to be fairlly easy to load for.
 
Model 10 Smith and Wesson .38 Special. Will shoot anything I put in it.
 
A revolver would get my vote followed with a shotgun (non-auto). Now most bolt guns will load and shoot most any thing too, though reloading for a bottle neck round is more involved. Autos are the most picky.
 
Easy, either of my .30-30's. It's a low pressure round and there's many powder/bullet combinations from plinking to hunting rounds.
 
My old M96 Mauser 6.5 x 55 shot almost everything well. 77 to 160 grain bullets, factory or handload, and mild to max loads
My Remington 788 Carbine in .308 Winchester is also very forgiving.
