If I'm purchasing or selling a firearm to someone out of state...do I need to have the transaction go through two FFL holders? In other words...the seller must send the firearm through an FFL and the recipient (buyer) must receive through an FFL also?

One FFL would be involved, on the receiving end:

May an unlicensed person obtain a firearm from an out-of-State source if the person arranges to obtain the firearm through a licensed dealer in the purchaser’s own State? [Back]

A person not licensed under the GCA and not prohibited from acquiring firearms may purchase a firearm from an out-of-State source and obtain the firearm if an arrangement is made with a licensed dealer in the purchaser's State of residence for the purchaser to obtain the firearm from the dealer.

[18 U.S.C. 922(a)(3) and 922(b)(3)]

Please do the research on you own, contact the ATF

Provided that your state has no law against doing so, private individuals can send handguns and long guns directly to 01 FFL holders.

However, not all 01 FFL holders will accept shipments from private citizens. Most who do not accept such shipments do so out of a desire to be absolutely sure that the person sending the firearm is indeed legal and on the "up-and-up", so to speak.

So yes, as long as it is legal for you to do so where you live, and the FFL on the receiving end is OK with it, you may ship direct to the dealer.
