I'm thinking about picking up an old Marlin 81 for cheap, but I must admit that I'm not a big fan of the stocks that come up close to the action.

How hard is it to get a separate piece of wood and graft it onto the fore-end of the old stock and achieve a nice consistent result? I've seen the Finnish stocks on M39's use a saw-tooth method and they usually seem pretty good.

There have been factory sporting rifles with pieced full length stocks.
So all it takes is an extension with grain close to the original stock and your ability to shape and finish it to look good.

Only thing about the 81 is that it's tube fed. As far as feeding ammunition goes I'm not concerned, since I figure I can make a small inlet to allow me to drop rounds through the stock (maybe I could do something neat like give it a spring loaded door).

However, I wonder if it's a big deal that the barrel won't be touching the stock for most of its length and the barrel will be propped on top of the magazine tube?

If you can keep the barrel off the stock, that should be a plus. I don't know what you mean that the barrel will be propped on top of the magazine tube. Does it not already have a hanger out there?

Mossberg once made a tube magazine .22 with full stock and a slot to load through.
Or you could just pull the inner tube all the way out and count in the right number of LRs.
