Recently I inherted a couple of gun projects, one is a Remington 512 with a bolt that will not operate, the second is a Winchester 121 that will not extract the round. If anyone has any experience with these please let me know, as I need all the help I can get, my thing is blackpowder so don't know much about these new fangled weapons. :D

The Remington 510-511-512-513 were about as reliable as any guns ever made. Saying the bolt will not operate is a bit like saying a sledge hammer won't work.

Can you describe the problem a bit better.

The bolt seems to be stuck, originally the bolt handle was broken so a new part was ordered, unfortunately my friend died before he could put it back together. I replaced the handle and put the bolt back in, now it will not turn, extract or any of the things a bolt is supposed to do. I assume it needs some type of fitting, but I'm not sure what!

I don't know what is wrong, but there should be no "fitting" involved. I suspect something is together wrong, but have no idea of what without seeing the gun.
