MN resident with permit. Heading to OR and WA for a couple weeks. Trying to figure out the limits. Of course both of those rather draconian states don't recognize my permit, but the other states I'm traveling through, do.

Specifically - looking for where to find the information where/how I can keep it in the car. Or if even that is out with those 2 states.
 
Washington and Oregon treat their residents fairly well , as the time being, this may change in the future. However, outsiders definitely will have problems; although acquiring an out-of-state Washington permit is very easy. Although you do have to apply in person. Oregon is impossible for someone not in a bordering state to acquire an out-of-state carry permit. Had you had a Utah CFP, I do believe Washington state recognizes it.

Open carry is legal in Washingtonand Oregon without a permit, but you cannot carry a loaded gun in your vehicle.

Avoid open carrying in Seattle or Portland if you cherish your life, even if it is legal.

Typical rules, guns must be unloaded and put in a locked case separated from ammunition. The gun case should be not accessible to driver or passengers, usually trunk or non-passenger area of the vehicle.

All types of guns are legal in Washington (except fully auto) and Oregon. Both states have no mag limits.
 
If you are coming and planning to engage in an outdoor activity like hunting, fishing, hiking, backpacking, etc, then you may carry concealed, without a permit or license, while traveling to, during, and returning from the activity.

RCW 9.41.060
Exceptions to restrictions on carrying firearms.

The provisions of RCW 9.41.050 shall not apply to:

(8) Any person engaging in a lawful outdoor recreational activity such as hunting, fishing, camping, hiking, or horseback riding, only if, considering all of the attendant circumstances, including but not limited to whether the person has a valid hunting or fishing license, it is reasonable to conclude that the person is participating in lawful outdoor activities or is traveling to or from a legitimate outdoor recreation area;

I know this for a fact. If your permit isn't recognized in WA don't have a loaded gun in your vehicle. That's one of the reasons I have a WA permit.

My WA permit isn't honored in OR so I just pack it away when traveling in OR.

Oregon has no State law against carrying a loaded handgun in your car as long as it’s : (a) Not concealed or (b) “Not readily accessible.” (If Concealed) “Not readily accessible" (for now) means: (4)(a) Except as provided in paragraph (b) of this subsection, a handgun is readily accessible within the meaning of this section if the handgun is within the passenger compartment of the vehicle. (b) If a vehicle has no storage location that is outside the passenger compartment of the vehicle, a handgun is not readily accessible within the meaning of this section if: (A) The handgun is stored in a closed and locked glove compartment, center console or other container; and (B) The key is not inserted into the lock, if the glove compartment, center console or other container unlocks with a key. However, localities are allowed to regulate loaded firearms in “public places” which now includes your car. This only applies to people without CHL’s. So you need to check local regulations. In Portland, for example, you may not have a loaded gun anywhere in your car and you may not even have loaded magazines separate from the handgun. It must still, however, be either visible or “not readily accessible."
