Gravity effects bullets only along the horizontal direction of the flight. Imagine that your bullet follows a fairly straight path and it will describe the Hypotnuse of a triangle. The actual distance that concerns the bullets is the base of the triangle.

Basically I aim a bit lower.

Whether you are shooting up hill or down hill, the bullet will hit a bit higher if the gun was sighted in on a level target.

It is true that when a gun is sighted in level the bullet will appear to strike high when shooting uphill or downhill but the difference is fairly small and would only come into play at extreme angles and fairly long distances. Think hunting mountain goats or something similar. For general hunting other factors will be more critical, range estimation and dealing with crosswind will cause more misses than shooting up or down.
The archery guys need to deal with this affect as the not so flat trajectory (compared to a bullet) makes it more noticeable.

until the angles get in excess of 45deg and/or 300 yards in range, there is not a big need to make adjustments. Bullet impact will not move more than a couple of inches. Even at 500 yards, you would need to have an angle of 25 deg or more to even consider making any real adjustments. unless you are expecting to be +/- 2 inches on your 500 yard shot.

Go here, there are some PDF down loads that are informative, and the last one has the information that you are looking for.
