I settled down on 2 platforms

Mine would be 1911s and S&W revolvers.

Field-stripping a 1911 is simplicity in itself. A complete strip is not much more difficult, and after you've done it a time or two is very simple. I do it (maybe) once a year, and that is more for curiosity/fun/relaxation than necessity.
I own both 1911s and Glocks, my Glocks I can field strip in about 15 seconds, my 1911s take quite a bit longer.
 
My two platforms are revolver and semi-auto. That's all the narrowing I want or need to do. I'm proficient with each of my guns, and it's a lot more fun to shoot a variety of them than one or two.
 
I don't buy a gun for parts availability or ease of disassembly I buy a gun that doesn't need a lot of replacement parts or need of frequent disassembly

I've kind of settled on just two pistol types, SAO and striker fired. So Tanfoglio Match series, 1911's, BHP's, Sig X6, and for striker fired Xdm's and various Walthers.
