The Romans didn't exactly invent folding knives. The oldest folder discovered so far is the 500BC Hallstatt knife. The Hallstatt culture covered a very large area from eastern Europe all the way to Spain, but not down the Italian peninsula. It was contemporaneous with the early Roman culture, but far earlier than what people think of when they're talking about "Romans".

Romans used friction folders and even made complex folders with forks, spoons, blade, and tools. The oldest known folders with mechanisms beyond the friction folders are Viking and the first locking blade folders were probably developed in Spain.
