If I were really going to be bushwhacking in serious bear country I would have the long gun slung in front of me and ready on a Safari sling or any of the many military type slings available today, there are also some scabbards that are out there that would be good for when you hit more civilized company although the stock will still show unless you can devise a hood to cover it. Opinions will differ but if I am preparing a shotgun for a bear attack I won't do it with a pistol grip only but rather a pistol grip stock, keep the standard mag and no on board ammo carrier and the barrel cut to 18.25". If you did it a lot maybe the time, money, and hassle for a short barrel shotgun would be worth it then you could cut down to magazine length.
 
Another vote for the Safepacker. I hike a lot on the AT in NC, GA, TN and VA. We have a fair share of hippies and granola crunchers that would just mess themselves at seeing a firearm on the trail. The Safepacker helps avoid those annoying encounters since it just looks like another piece of gear.

It's hard to see in the pics, but the safepacker has a "flap" that wraps around the entire back side of the holster. It is large enough to wrap around the pack belt on my Gregory pack. So, it ends up mounting like any other belt holster.

Also, it's easy to detach at the end of the day for hand carry, over the shoulder (with a strap) or attach to your pants belt.
 
Another happy safepacker user here. I have mine attached to my packs belt. It just blends in to the background and that is the genius of the safepacker IMOO. I have the government size and it will hold my SIG P220 or a Ruger Security Six just as well. There is enough room to hold two spare single stack mags or three speed loaders (stacked on top of each other) in there. When I carry a dbl stack 9mm or .40 you can only carry one mag.
