What are the appreciable differences, if any, between a Remington 700 PSS in .308 and a Remington 700 VLS in .308 with the heavy barrel? Thanks in advance.
the H.S. Precision stock on the PSS, the PSS weighs very slightly less, and I think the finish on the VLS is more of a gloss/blue and the PSS has a matte finish

Take a look at the VSF; still get the H-S Precision stock. Save some $$$. Can't tell from the info on the website if it's available in .308, but it probably is.
What model 700 should I look for I was going to send it out to get the Barrel and stock that I wanted put on it? Where would the best place to be to look for just the action? Or is that a pipe dream and is buying one of the package deals from one of the 700 custom shops the way to go? One last question...which would be a better caliber? .308 vs 300 win mag and maybe .30/06?
I suggest that you buy a factory gun, ie 700 P if you like the stock or 700 VSF if that floats your boat. Then you have about 3500 to 4000 rounds of reasonable accuracy to learn to shoot the 308. That is a lot of trigger time for most folks. Then when you burn out the barrel get it rebarreled and get it done up by a good smith using a good barrel!
Get yourself a torque wrench that measures inch pounds so you can reassemble the gun in a consistent state of being! The only thing you have to do is tweak the trigger, and then you are tasked with finding a good factory load to use. I tilt towards BHA, as the brass you have left over is better then Federal for longer term reloading use.
I would learn to reload for the 308. It is basically a no brainer!

the action on the PSS and the varmint guns are exactly the same. the PSS is parkerized while the varmint guns have a matt blue finish. the parkerizing finish is much more durable and rust resistant. the stocks are both made by HS and both have the full length bedding block. the PSS had a wider forend and a more verticle grip then the varmit stock. both are good stocks and are made for pinpoint shooting, it just comes down to a matter of personal preference.
if you want to rebarrel and restock a 700 don't bother with either one. buy a used but not abused basic no frills ADL with a crap stock either wood or the lightweight plastic. you can find them on the auction sites for around $250, or look around the local ranges on the bulliten boards and gunshops.
with hunting season starting everyone is looking for a gun and the prices tend to be higher. wait till after the season and you'll see lots of them for sale.
