Rifle builds (no, NOT ARs!)

I am building my first AR this summer, but I don't want it to be my only rifle. I have been wanting a higher-caliber rifle to play with and I figured since I will have an AR build under my belt I should try something more challenging in the not-too-immediate future.

What are other rifles you can build from a kit? FAL, AK, HK93 right?
Where are good resources for kits/parts for these rifles, and how much will I save by building?

I am also considering the convert a Saiga project, as I love the look of the AK. Would it be feasible to keep the original hunting-style buttstock and handguards for the saiga and still find enough parts to replace with USA made ones? I don't know much about Kalashnikov internals, so anything you can tell me would be great.

converting a saiga would be the cheapest, and you can keep the stock furniture, and keep it legal... most of the parts kits have short barrels, which makes them replacement only
