This is just some general information that might help you,
The hand rubbed oil is the finish. Simply reapply and rub it in every season or if it gets bad weather exposure. I am assuming that you used something like tung oil, boiled linseed oil (blo), etc. or mixes such as Tru Oil or linspeed. The wood will darken a bit with exposure to sunlight--more for linseed finishes which can develop a reddish tint. Oil based stains are compatible if you like to darken a stock from its natural color.
If you want nearly a gloss finish using hand rubbing, you have to keep reapplying and sanding until you get what you want. If you look around on the internet there are instructions how to do that as well as in old gunsmith manuals. Brownells is another place where you can watch videos, check the products that they sell online for stock refinishing, and read the reviews of those products.
Polyurethane finishes are a topcoat that requires good adhesion to the wood--oil finishes prevent that from happening so you cannot generally put polyurethane/varathane/etc over an oiled stock. Some varnishes are compatible with oiled stocks though. Generally, you use a water based stain under poly or a combo stain/poly mixture or you can mix a staining agent with poly or oil yourself.
