It depends some big ones are okay some are rank as rotten kitty litter. You can usually tell from the smell of the hog. if you walk up to him and he's got that stringent cat piss smell you are in for trouble. I've killed some big old sows that weren't to bad. But most very old mature boars are pretty tough and rank.

Truer words were never spoke! Those become "Buzzard Bait" when I kill one now!

But, if you really want to save the meat anyway, for whatever reason!
You must get that hog gutted and skinned before he cools off! I actually prefer to skin first then gut!

Then place in a large ice chest, pour a quart of white vinegar over the meat and cover with ice! Let the meat stay in the icy slush for at least three days and five isn't too many. Just add ice as needed.

I personally just walk away from the stinkers nowadays because I don't want to go to all the trouble, but I have seen this work more than once!
