I've got CZ 75's in Polycoat, nickel (it's matte, not bright), regular stainless (it's matte, not bright and looks almost like the nickel), and one of the very few high-polish stainless (only a few were shipped). A friend has one in blue, and it's absolutely one of the most beautiful blue finishes I've ever seen.
None of my guns shows any wear, rust, scratches or dings; you're safe with Poly, nickel or stainless. Aesthetically, they're all pleasing. Because the stainless is matte - a bead blast look - it may someday show scratches(?).
If I had to choose one, I guess I'd pick their regular matte stainless, for durability and beauty.
