Stock refinishing tips for a bland Hakim?

Now, I know there's nothing bland about the Hakim and that stock refinishing gets a lot of traffic around here, but my question is somewhat unique.

How do I get some grain and color out of a plain jane birch Hakim stock?

It is kind of a creamy yellow color, seemingly without any grain or color in the wood. I'd like to bring out what's there without staining it too darkly, but is this possible?

Are there some tricks of the trade where getting birch to pop a bit is concerned? If a stain is the only option, what color looks best on birch? Also, what's the best option for removing the original finish (this goes for another stock or two I'll be refinishing too)? Thanks in advance!
