I'm looking for an adapter that allows you to mount a modern scope on the older style "Unertl type" blocks. I've seen them online but can't seem to find one now. If anyone can point me in the right direction I'd appreciate it !

There was a set on ebay or gunbroker last week.
you might try looking there.
They haven't been made in a long time so you might have to watch the auction sites till a set of them show up

You might want to think twice about this. The 'Unertl' target scope blocks were used with mounts that allowed the long-tubed scopes to slide forward under recoil, so there was very little stress on the blocks. Since the blocks were usually mounted on the barrel, the screws securing them were small and tapped into shallow holes. Barrel steel is commonly much softer than a hardened action.

Add these up, and putting a heavy mount with a modern scope onto these blocks with a rifle having appreciable recoil might result in the blocks getting loose over time. If you are planning to use the rifle for target shooting, you might want to stay with the original scope type. There are lots of Lyman targetspot, Lischert, and Unertl scopes with their origial mounts available used, though prices have gotten high. Leatherwood also has their 'Malcolm' scope new, which would be a direct fit on your blocks.

The other thing is, no common rifle scope has enough eye relief to mount it that far forward on the barrel where the target blocks are located and be able to see through it.

A Scout Scope or a Pistol Scope might have the long eye relief.
But they don't have enough tube length to span the 7.2" block spacing.

I've been considering doing the same thing eith a redfield 3200 in have nut I'll probably end up using custom bases and talley rings
