I am going to buy one of these.

I have several rifles to choose from (looking at them)

How do I pick the best one?

What should I do to pick the best rifle?

These are all single stack mags.

look for canted sights, canted gas block, tapco triggers, wood fit, and if theres any wabbley mags

Never shot a single stack nor seen one but when I was in the market for my first AK type was advised to avoid the single stack as they had more jamming problems than you would like to have. Can't speak from any experience here. Just hearsay.

regarding Tapco trigger, is there a way to check (Marking or engraving of some sort?)

I have seen some with the sights not lined up.

Intent for rifle is plinking at the range, I plan on refinishing the stock and buyiny a few thousand rounds of the cheap surplus ammo.

For under $500 I should be able to accomplish this.

Yes, the trigger will have Tapco marked right on it. And just so there's no confusion, you want it to have the Tapco trigger.

Yes, the Tapco trigger group is much nicer than the factory Romanian stuff.

Most single stacks do not come with the Tapco parts. They are usually added to stay compliant when making the gun a double stack model.

I would STRONGLY recommend you look at a double stack instead. Higher capacity, better parts (usually) and nicer triggers. They are nicer guns.

Don't get the single stack. I got a double stack from Aim Surplus for about $290. It has the terrific Tapco trigger. Wonderful value. Strongly recommended.
