What powders for .270, 7MM.08, and 7MM Mag

You went to the Hodgdon website and they came back with an IMR powder when they make their own powder (H4350)? Hopefully that was a typo. That being said both powders are very close (but not the same ballistically) to being the same. In the Lyman reloading manuals I have the loads for one powder over the other is a couple of grains difference.
Quick reminder, Hodgdon doesn’t “make” any smokeless powders. They act as the U.S. distributor for manufacturers and package and sell IMR, Hodgdon, Winchester and the former Western Powders, Accurate and Ramshot.
 
Ooh, la, la. I had forgotten that I read about that in one of these forums a few weeks ago. I checked the powders I have and found the following for whatever it's worth:

Shotgun and Handgun Powder
Herco by Hercules in Wilmington, De. made in USA, Unique by Alliant, Radford, Va. made in USA,

Black Powder
Pyrodex, Pyrodex Select, Triple 7 all made by Hodgdon in USA

I stopped by Walter Craig and they had plenty of H-4350, but no H-4831, no RL 16, no RL19, two pounds of RL 22, nothing above that. Not a lot of powder overall. My PRS buddy's brother has a shop about an hour away, need to check with him.
 
Turns out my PRS buddy actually has some H-4831 and is going to give me a pound ( I have him 1K LP primers last year), so I'll have some soon.

Turns out we can add .280 to the list with Hornady 154 Gr SP Interlock bullets.

That's a good bullet for the .280. Not to mention 7x57 or 7mm RM. Excellent bullet.
 
As previously stated, the 7-08 does not need a slow powder, but the other two would do better with something slower.

Getting a slower powder right now can be a real challenge as most stick powders other than VV are rare and/or have gone up a lot in price. On the other hand, Ramshot seems attractive for trying out.

Just to give you some options I ran a Quickload table looking for optimum burn rate powders for the 270. This is not load data, but it can help compare powders.
