What tastes good, what tastes bad?

I want to get into hunting but I really only want to hunt things that I will eat. I know some people hunt for sport, but I personally only want to hunt for food (at this stage at least). So far I've only tried venison, which is absolutely delicious (as I'm sure many of you know). I've heard mixed things about bear, but I wouldn't be allowed to hunt that for a few years anyways (points). I always hear that pheasant is really good, and it seems like different people have different things to say about other types of small game. So if all of you nice people could give me a few opinions it would help me decide what I want to hunt. Heres a cheat sheet to make it even easier (thanks in advance!)

All God's critters are tasty. I have eaten (at least to try) all the critters I have hunted.

Virtually all wild game is excellent if killed cleanly, butchered correctly and prepared well. Everything you're allowed to hunt as legal game is good...
 
Elk, rabbit, duck, and bear are all great! One of the best meals i ever had was Bear tenderloins wrapped in bacon and grilled.

I have also had cubed venison heart in red sauce which was very good too.

Virtually all wild game is excellent if killed cleanly, butchered correctly and prepared well.

Great Point! Take good care of the animal after the kill.

At the risk of being redundant, truer words were never spoke. Wild duck is a prime example. Prepared properly,delicious. Underseasoned and overcooked, horrible.

I've always heard the same. As an avid waterfowler I've been wanting to get out west to hunt them, just haven't made it yet.

The best mammal I've ever eaten was Caribou. As tender as a well cooked beef roast. And tastier than you could imagine.

Not the species but the cook to praise or blame for the taste.....not everyone can serve up a gourmet meal, that's why Ketchup was invented.
 
I have only ate Squirrel, Deer, Quail and Rabbit from you list. Deer, Quail and Rabbit all taste great. The squirrel that I have ate has always tasted like turpinetine because their main food source is pine cones so I can not recommend that but otherwise you can not go wrong with the others.
 
BBQ'd quail is excellent (I like Woody's sauce). Dove stuffed with jalapenos and pepper jack cheese, wrapped in bacon and grilled around 250 degrees is excellent. Venison makes much better jerky than beef. I trim the meat very well (no fat, no connective tissue) then use House of Tsang Classic Stir Fry Sauce to marinade then sprinkle with coarse ground black pepper. Dehydrate and store in fridge. The buffalo, elk, and duck I have eaten were also excellent though I didn't cook them myself.
 
We ate some of this pig (from hunt last week) tonight...cubed meat from the hams, doused in Soy Sauce and black pepper, cooked in olive oil in the electric frying pan.

Both my wife and the 15 year old went back for seconds. :cool:

rabbit and squirrel, which can be hunted on in as little as 10-20 acres, especially with an airgun, are a good way to go, and both are quite yummy

for fish, I'm partial to bluegill (trout are good too) :)
 
For wild American game, its Elk. There is nothing that comes close to a young dry cow or a nice fat Spike Elk.:)
 
Pheasant pot pies - ****

Had alligator once but i guess that doesn't count. Many game birds of the mid-west taste great if done right.
 
Most anything that is killed quickly, cleaned properly, and cooked right will be delicious. Before you go hunting you really want to know how to dress your game. Just read up on it ahead of time and you'll do fine.

Recently we cooked some hog shoulder in a crock pot with an apple and cranberry recipe and it was great.
 
I've eaten everything on your list. It all basically tastes like chicken! :)
 
Deer, Elk, Turkey and Rabbits are among my favorites.

Although does this make me weird or tell me I am not the only one. When I eat deer or elk not so much the other two. I can distinctly remember everything about the hunt. The weather conditions what I saw that day. The animal that I am eating, the shot every detail through field dressing and butchering. My wife thinks I have issues well that is probably true. Does anyone else have this. I consider it a blessing to know and remember the gifts of nature.
 
In terms of exotics, axis venison is one of the finest meats I've ever tasted, of any kind. Fallow venison is nearly as good. Both are far superior to whitetail venison, which I don't dislike but don't regard as a favorite (especially for what it costs to hunt deer in Texas).

Wild pork, as Cocked & Locked pointed out, is very good. I like mine slow-roasted with a little barbecue sauce on the side.

Wild turkey breast is excellent, too, as is pheasant.

Not crazy about duck. Heard too many gross-out stories about wild rabbit to give it a try.

Just my opinions.
