I know they were made by about 5 different nations. What about variants? Is there only one general SKS model or are there longer barrel sniper types and/or short barrel carbine types?
 
sks paratrooper shorter barrel and lighter weight but still 10 rd internal magazine. Which I recommend that you keep like that.

sks model d which takes ak mags but is made at the factory that way not a sorry conversion by someone who dosen't know what they are doing!

Then of course there are the dozens of things you can put on them and fix them up like you like them!

I like the Yugo 59/66. Built like a tank. Here I am last winter with mine. I have since added a reciever cover mounted 4X scope onto it. I'm good out to 300 yards with it. (That's the maximum my local range has.) The extra weight really soaks up recoil.

Their are some SKS's that are made to exept AK magazines, and work reliaibly.

I love my SKS, its very accurate. The only thing I dont like about my Yugo, is that the original gernade launcher was removed, and replaced with a new muzzel brake with a nasty weld on it.:( Yea, like im going to waste my time to find the "blank" ammo needed, and a gernade device to fit on the launcher.

(If I wanted a gernade launcher, I would just erect a "Potato Launcher" wich is also illegal now)
 
Would an SKS with folding stock and pistol grip but also FIXED 10rd magazine be California legal?

it'd also be UUUUUGGGLLY!! ;)

There's only two barrel lengths. 20" and 16" There were no 16" SKS issued by any military. All were all Chinese commercial Norincos. They were either the "paratrooper" model with a fixed magazine or one of the SKS models that Norinco made to take AK mags. (Norinco made a LOT of different comercial variations)

Otherwise, except for the type of wood used for the stocks. all the military models (including the genuine Chinese military Type 56 SKS) are pretty much the direct copies of the original Russian design with the following three major exceptions, all three are shown in karlsgunbunker's pic actually. Left most in his pic is an Albanian which differed from the original design with a spike bayonette, a longer handguard and stock, two buttstock compartments, a different bolt carrier handle and a number of minor differences. The middle rifle is the familiar Yugoslavian 59/66 with a grenade launcher(doubling as a crude muzzle brake on some), flip up grenade sight, night sights (some trituim, most with luminous paint), a beafier stock, a rubber butt pad and lack of chrome lining in the bore. The rightmost two are Yugoslavian M59s which are pretty much copies of the original Russian except for the lack of a chrome bore and a dark gray finish on the bayonette.

There are some Yugo M59 rifles that are low serial numbered that have a longer then standard barrel and a front sight with a windage screw. These appear to be prototypes.
