For realism with the way it would really happen, I think the scene from "The Long Riders" where the James gang gets shot up in a Minnesota town was great. Most men back then were Civil War vets, they would not let a bunch of outlaws take over - and they didn't.
Tombstone, Open Range, and Broken Trail all have great scenes.
The classics Shane and High Noon are great golden-era cinema fights.
Silverado, and, believe it or not, the 1980's remake of "The Lone Ranger" for pure fun!
Unforgiven - very good gun play throughout the movie.
Lonesome Dove - not for any one scene, but for realistic depticiton of the fact that most fights were not fair, stare-down,man on man battles.
