I ended up buying the Hornady 7.5x55 Series III 2-Die set after reading information on the Hornady dies. It has a elliptical style expander which is specifically designed to aid in necking up brass. This is great since inexpensive, reloadable 7.5x55 brass is nearly non-existent while .284 brass is still being manufactured by Winchester. I ordered a bag of 50 Winchester .284 cases along with my dies and necked them up the other night.

By the way, Graf & Sons http://www.grafs.com/ sells 7.5 Swiss brass. I don't know about the quality (vs., for example, the pretty-well uniform and high-quality of Winchester), but it is available for about $28 per 100. I understand that if you have a C&R that you get a discount (mine went off today, so we'll see).
As long as we're here, where did you get your K-31 (I'm assuming that this is the recipient of your 7.5 Swiss, not a 1911), and how much did you pay for it? How's the accuracy with your handloads? Thanks a bunch for answering all of these questions.
Regarding the shell holder, does Lee make one for the 7.5? Alternatively, if you buy RCBS dies, will they come with the shell holder and, more importantly, will all of that fit in my single-stage, bottom-of-the-line Lee loader?
