I have 6 CZs, 3 with standard safeties and 3 with the decocker setup, but I don't have an Omega trigger. I'm such a big fan of the Cajun Gun Works parts for the standard trigger that I wouldn't go Omega for fear of not being happy with it.
IME, the best a CZ trigger can get is to start with a non-firing-pin-block gun like the 85 Combat and then add the following parts:
CGW 54460 Ultra-Lite Kit using the range hammer spring ( this kit alone provides a very noticeable improvement in both the DA and the SA trigger, plus makes it very easy to rack the slide. Racking a CZ slide isn't a problem, but with the Ultra-Lite Kit it's just much lighter.)
CZ Pre-B short trigger reset (this is a CZ part)
CGW 6-SAO trigger
CGW Race Hammer Kit
CGW floating trigger pin
The result of the above modifications in my 85 Combat is an amazing light and creep-free trigger, essentially no camming back of the hammer before firing, and a short trigger reset (the trigger operates within the thickness of the trigger, seen below). In side by side comparisons, I've found this setup to be noticeably better than the factory target gun triggers like the Shadow series. I don't know how it would compare to a factory single-action competition gun like the Czechmate, which I would expect to be extremely nice, but I've never fondled one.

Note that with the decocker guns, you wouldn't want to convert to single-action only (for safety reasons), and therefore you can't get all of the fabulous trigger features that the above gun has. However, if I were okay with DA/SA, I'd go with the decocker version because it is just so quick, easy and foolproof/forgiving to lower the hammer on, especially for someone not comfortable with thumbing the hammer down or someone old enough that they don't fully trust their grip.
My most recent CZ acquisition was a 75 SP-01 decocker (so-called Tactical). I decided that I like the decocker enough that I'll forego the SAO setup, and just make the DA/SA trigger as good as I can. I got lucky as it has a relatively great factory trigger out of the box, so it's off to a good start.
If I had to choose only one CZ, and I wasn't going to spend the $ for one of the high-end competition guns, I'd go with the SP-01 and put some CGW parts in it to make the trigger to my liking. Or if I had to leave it stock, I'd still go with the SP-01. If I didn't care about having a rail, I might go with an 85 Combat if I had patience to locate one. After adding a Crimson Trace CMR-206 to my P-01 I became a BIG fan of the green laser, hence I want a rail on the full-size CZ, hence the SP-01.
All that said, it's nearly impossible to go wrong with a CZ handgun, you just need to do your homework to figure out which one is BEST for you. They are all great though, IME.
